Overkill for what purpose?
The ability to monitor each cylinders AFR is certainly much more beneficial than just having the average AFR from all 6 cyl. However, is it needed? No. Is it ever to be needed? Probably not. A cheaper option is to have 6 EGT probes. If all cylinders are getting the same fuel/air/spark then the EGTs should be very close. If any of them are cooler or hotter than you know you are not getting the desired AFR in that cylinder.
I guess you probably need two, because I think you would need 6 channels. looks cool...probably overkill
I am using a Digital Wideband Air / Fuel Gauge
and pretty happy with it.

my thought was people with an A/M EMS, you're able to control injector % per cylinder...
I have googled that peeps measure temp of each output on the exhaust side and bump up inj % on high temp cylinders...
