so why do I still have the temperature in the car ?
the new rad does not have it and I still see the temp gauge showing some values

I would say it is a rad fan temp sensor or temperature window switch

incorrect. two water temp sensors on intake manifolds one with 2 wires (ecu input) and the other has one wire (temp gauge)

sensor for the stock fan? not sure how clutch fans work..they need an electrical input? pretty sure they're just bolted on the water pump pulley.how would it get a signal from electrical sensor?

Not to familiar with GTST's but GTRs have electric fans as well as engine driven fan off water pump, most cars with A/C also run electric fans too. There are clutch fans with electric controls on newer cars and trucks but not on these, should be easy to figure out with the shop manual.
