I agree, engines like to run at a certain operating temperature range.
Just using 86 degrees as a max temp it probably would reach during constant foot to the floor thrashing. Not up to 100 degrees like with stock thermostat.
The rise in coolant temperature of a engine that has higher hp, higher boost levels run through it and is thrashed constantly (foot to the floor thrashing) can rise above operating temperature range with stock thermostat. To keep engine coolant temps around operating temperature range during constant foot to the floor thrashing, low temp thermostat is used.
For most road cars a low temp thermostat wouldn't be needed as your not constantly thrashing with higher boost levels, although some high hp, high boost GTR's, 400hp S15 I've seen have a low temp thermostat. My car still has stock thermostat, but doesn't have enough boost, hp to need a low temp thermostat.
