Interesting. The theory of electric fans not being as efficient since they are required to reach a certain temp before they kick in is irrelevant since I stated in my op that my fans are hard wired to ignition and are always running. I'm sure the fans are up to the task and I'm leanin more towards it being the n1 pump

I run an n1 with an oem fan/shroud and a godspeed radiator. Never once saw temps on my pfc go past 75C. On my cusco water gauge measured beside the upper rad hose on my rad never saw over 85-90C even after shut down. Which is when things tend to get hotter. Do you have an ati damper? Are you using the larger water pump pulley included with it to keep it in oem spec? Can you throw your old oem fan back on easy to see if the problems still there?Dang! You got shocks, pegs... Lucky! You ever take it off any sweet jumps?

Most of the time it boils (wink, wink) down to the electric fans not being strong enough (wattage too low). I had a single 12 fan on a stock rad cooling a 540hp 454 Chevy. The fan was $200 and pulled 25 amps on start up and 14 amps running. It gets to 40 deg C here in the summer and a single fan just barely did it on that that car in the summer. Twins on a Skyline should be more than enough...if the fans wattage is strong.
OEM fans pull like crazy so the twin Subi set up working well makes sense. The twins on my old Caprice worked stupid well, the secondary fan hardly ever came on to maintain temp. When they both came on though all kinds of stuff would come blowing out from underneath the car, they moved serious air.
