If you still have to ask the question, stick to 30.

Depends on oil temps (oil temp gauge), clearances of engine (cst rating of oil is how thick it is and how much it closes the clearances / gaps between parts), which can be monitored via oil pressure gauge and comparing to factory oilpressure figures (oil pressure changes with forged pistons, upgraded oilpump, etc). As oil gets hotter the cst rating drops. The cst rating of oil is measured at 100 degrees C and the w30, w40, w50 have cst ratings at 100 degrees C.

They are mentioned in this document -

7.5w30 is factory with stock engine with stock oiltemps, stock clearances. On sticker (drivers side of centre console) on my car from factory, it mentions to run 5w30 oil and certain type of oil (Synthetic???). With higher oiltemps, from memory (look at document above), I think was up to around 120 degrees C?? for short periods, a w40 will work. If constant over 100 degrees C a w50 will work and still have good cst rating. A modified RB20DET without engine oilcooler can reach 90 degrees C+. RB26 might be cooler due to heat exchanger near oilfilter.

I run 10w40 on street (10w is recommended with hydraulic lifters), but my tuner mate reckons 5w40 would be better for cold starting.
