Hi, im doing a simple gasket match to the head was wondering if i can remove this bulky area in the exhaust ports!??? I hope and there is no coolant passage behind it or anything else!!!

i would not remove this , if you think about it - the exhaust is exiting these ports and the most important thing when port matching is to make sure the gases arn't subject to a wall or "step" on its way out . If the exiting port in the head is smaller than the gasket and header/manifold there is no restriction so to speak, just a slight amount of turbulence.
Realise that the area just behind the valve where the gases first pass is also smaller than what you see here. This area isn't the most restrictive.
